
Shepherd's Pie
🍀 Irish-Inspired Garlic Herb Shepherd’s Pie (Dairy-Free & Healthy!)
Enjoy this comforting, hearty, and packed-with-flavor recipe on St. Patty's Day or any lucky day of the year!
🥕 Ingredients:
For the Filling:
- 1 lb lean ground turkey, beef
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup carrots, diced
- 1 cup peas (or green beans)
- 1 cup mushrooms, chopped
- 1.5 tablespoons tomato paste
- 1 teaspoon Worcestershire sauce (or coconut aminos for a soy-free version)
- ½ teaspoon thyme
- ½ teaspoon rosemary
- 1 cup vegetable or beef broth
- 1 tablespoon arrowroot or cornstarch (to thicken)
- Salt & pepper to taste
For the Mashed Potato Topping:
- 4 large golden potatoes, peeled & cubed. (Can also use sweet potatoes)
- 1 cup unsweetened coconut or oat milk ( I use NutPodds original creamer)
- 1 tablespoon olive oil or vegan butter (I use Earth Balance Butter with the red lid)
- ½ teaspoon garlic powder
- Salt & pepper to taste
Directions:
1️⃣ Make the Mashed Potatoes:
- Boil potatoes until fork-tender (about 15 minutes), drain, and mash with coconut/oat milk, olive oil, garlic powder, salt & pepper. Set aside. (Note: I use NUTPODS original creamer so it's a blend of coconut and almond milk.
2️⃣ Cook the Filling:
- Heat olive oil in a pan, add onions & garlic, and sauté until fragrant.
- Add meat and cook until browned. Then Remove and set aside leaving the drippings from the meat to cook the veggies.
- Stir in carrots, peas, mushrooms, tomato paste, Worcestershire sauce, thyme, and rosemary. Cook until veggies are tender and then add the meat back in.
- Pour in broth, bring to a simmer, and mix in arrowroot/cornstarch to thicken.
3️⃣ Assemble & Bake:
- Preheat oven to 375°F (190°C).
- Pour filling into a baking dish or cast iron skillet and spread mashed potatoes. Leave them fluffy and not flat.
- Bake for 20-25 minutes, until golden brown on top.
Let cool for a few minutes, then serve & enjoy!
